BBQ Biscuit Cups

Yields: 1 dozen
1 ½ c. flour
2 t. salt
1 T. baking powder
¼ c. butter or margarine, cut into small pieces
¼ - ½ c. milk
1 lb. Ground beef, fully cooked and drained or 2 c. fully cooked kidney beans
or lentils
1 c. barbecue sauce
1 c. shredded cheddar cheese

In a bowl, combine flour, salt and baking powder. Cut in butter or margarine
until crumbly. Slowly add milk, starting with just ¼ cup and adding more as
needed, to form a smooth but not sticky dough. Roll out dough and cut into
12 circles. Press into muffin tins.
Combine cooked ground beef with barbecue sauce. Scoop into biscuit lined
muffin tins. Bake at 400 degrees for 15-20 minutes. Remove from oven,
cover each cup with some shredded cheese and return to oven until cheese
melts, about 3-5 minutes.
KITCHEN TIP – These freeze really well. You can freeze any leftover or make
a double batch. Freeze in plastic freezer bags. To reheat, bake from frozen
at 350 degrees for about 10 minutes, until heated through.
KITCHEN TIP – If you want, you can replace the homemade biscuit with cans
of biscuit dough from the dairy section at the grocery store.


Taco Mac & Cheese (small twist on a classic)

1 lb. Elbow macaroni, fully cooked and drained
¼ c. butter or margarine
¼ c. flour
2 c. milk
2 c. cheddar cheese, shredded or cubed
Salt, to taste
1/3 c. salsa

Melt butter or margarine in a saucepan over medium heat. Whisk in flour
and cook for 2-3 minutes. Whisk in milk, bring to a boil and simmer until
thickened, stirring frequently.
Remove from heat. Add cheese and stir until completely melted. Season to
taste with salt. Stir in salsa and noodles.

Crockpot Baked Spinach & Cheese Noodles
3 T. butter or margarine
1/3 c. flour
2 ½ c. milk
1 t. salt
½ t. black pepper
3 T. Dijon mustard
15 oz. Ricotta cheese
½ lb. Frozen chopped spinach
1 red pepper, diced
1 lb. Uncooked noodles of choice
¼ c. Grated Parmesan cheese
In a medium saucepan, melt butter or margarine. Stir in flour and cook 2
minutes. Whisk in milk, salt and pepper. Bring to a slow boil and boil until
thickened. Remove from heat. Stir in mustard, ricotta, spinach and red
pepper.
Place uncooked noodles in the bottom of greased crockpot. Pour sauce on
top. Top with Parmesan cheese. Cover and cook on low 5-7 hours, until
noodles are fully cooked.

Honey Baked Lentils

2 1/3 cups lentils (1 lb)
1 small bay leaf
5 cups water
2 teaspoons salt
1 teaspoon dry mustard
1/4 teaspoon ground ginger
1 tablespoon soy sauce
1/2 cup chopped onions
3 carrots, peeled and diced
1 cup water
1/3 cup honey

In a dutch oven or saucepan combine lentils, bay leaf, 5 cups water and salt.
Bring to a boil. Cover, reduce heat, and simmer for 15 minutes. Discard bay leaf.
In a bowl combine dry mustard, ginger, soy sauce, onions, carrots and 1 cup water.
Add to lentils. Pour honey on top. Cover tightly. Bake for 1 hour at 350 degrees.
Serve over rice.
NOTE - This can be made in a crockpot by combining all ingredients and cooking on low for
6-8 hours. Or you could make this during stolen moments by doing everything except the
baking earlier in the day or even the day before.
Florentine Alfredo Pizza ( I think I'll add artichokes to this recipe when I finally try it)
1 tube refrigerated pizza crust
olive oil
1 lb. frozen or fresh spinach
5 to 6 cloves of minced garlic
1 cup jarred Alfredo sauce
1 (8 oz.) bag of shredded mozzarella cheese
1/4 cup chopped green onions
1/4 cup grated parmesan cheese

Preheat oven to 425° F.
Unroll pizza dough onto a pizza pan or pizza stone. Press out to cover the whole pan. Bake
at 425° F. for about 7 minutes, or until lightly browned.
Heat some olive oil up in a skillet and add the spinach and garlic.Cook for 5 minutes.
Spread the Alfredo sauce on the pizza crust. Top with the spinach then top with mozzarella
and Parmesan cheese. Sprinkle top with green onions.
Bake about 7 to 8 minutes or until cheese is melted and bubbly.

NOTE - This is the easy version using refrigerated pizza crust and jarred Alfredo sauce. This
is a great one to make on a busy Friday night. You can use a homemade pizza dough and
Alfredo sauce though, if you'd prefer.
